HEALTHY CHOCOLATE TRUFFLES

Ingredients:

2 cups pitted dates – soaked in water for about 1 hour
1 cup raw quinoa – cook & use 2 cups of cooked quinoa
1 cup any nut butter – I use almond butter
1 cup cacao powder
1/2 cup coconut oil
1 cup dessicated fine coconut

Method:

Add dates to food processor & blend until almost a paste. You can add a little bit of water.
Add the nut butter & blend until smooth.
Add coconut oil & blend.
Add the cacao powder & blend.
Add quinoa & blend.
Add coconut & blend.

Test how sticky the mixture is.
If it’s too crumbly, add more coconut oil or nut butter.

Optional: Roll in fine dessicated coconut or cacao powder.
